Summer is my absolute favorite time of year, food-wise. The produce is delicious and the heat lends itself to eating it.
The warm weather is also motivation to keep us in shape. Why? Wearing less clothing in warmer weather is incredibly motivating. The easiest thing to do? Go for a simple 20-30 minute walk after dinner, three to four times a week. Do this in addition to your normal workout routine. That extra calorie burn will make a difference over the summer.
Interesting Summer Salads
I love salads all year round but summer produce lends itself to creative dishes. The thing is, my salad game is pretty lame. I generally throw in greens, chickpeas, onions, cucumbers, tomatoes, you get it. Boring.
Equinox offers up four delicious salads that look amazing:
- Quinoa with English Peas - this also contains mint. Peas + mint = amazeballs. Trust me.
- Watermelon, Radish & Beat Salad - I love beets but hate cutting them because they are messy. If you make this, let me know.
- Steak Salad with Asparagus - perfect for you guys who think salad is chick food. This is a substantial salad, using flank steak, that's easy to make.
- Watermelon Salad with Ricotta, Basil & Red Onion - I could live on watermelon. This is a fresh and interesting way to incorporate this delicious fruit into a savory meal.
